Cabbage Salad from Café Pita + (Houston, TX)
Chef Omer Okanovic of Café Pita + was born in Bosanska Dubica, Bosnia, and spent his childhood in the kitchen asking his mother “What’s this? Why are you doing that? Can I help?” By an early age, he knew he wanted to be a chef.
“My mother has always been my inspiration,” stated Okanovic. “I watched how hard she worked taking care of my sister and I. She enjoyed food, her family, and she taught me that family is the most important thing in the world.”
At the age of eleven, his family moved to Saarbrunken, Germany, and he enrolled in culinary school at seventeen. “I had studied German in school as my second-language,” he stated. “It was very hard for all of us to watch the war back home,” he said. When the war ended, his parents and sister move back home. He moved to Houston in 2000. “My goal then, as now, is to share the cuisine of my homeland with Houston, and all of the USA.”
- one small cabbage head
- 1 tbs white vinaigrette
- 1 tbls olive oil
- black pepper – to taste
- salt – to taste
- 1 tomato
- tlbs parsley
- Cut fresh cabbage in half then slice thin, shoe string size, place in a mixing bowl soak it in water add salt, let it sit for couple of hours.
- Take the cabbage out of the water and rinse it off.
- In a clean mixing bowl add cabbage, white vinaigrette, olive oil, blak
pepper and salt, toss.
- Plate and garnish with sliced tomatoes and parsley.
